JTokkit - a Java tokenizer library for usage with OpenAI models

As large language models have advanced and APIs to access them have become more accessible, I decided to prototype integrations into some Java projects at work. While building these prototypes, I needed a way to count tokens to optimize prompts and ensure that requests stayed within the allowed context length of the API.
