NLP for information extraction

Hey i am a student and working on a project for a startup in which I have to extract information about an item like it's texture, flavor and so on based on reviews by user, first of all I have to gather training data and then do this information extraction, can anyone suggest some good machine learning techniques to look into for this project, how should I start with this project
