How comfy would you be with recording the AUDIO of meetings with the goal of optimizing meetings using ML?

So this is a kind of odd project that I am doing, but not sure what the general consensus is to audio being recorded at meetings. I'm planning on using an Automated Speech Recognition model to convert it into text.
